Cedar nut kernel contains 55-66% of fats, 13.5-20% proteins, starch, sugar, vitamins.

The plant protein of cedar nuts is ideally balanced, it’s comparable with the tissue proteins of people and it can be obtained in 99%. Another factor, determining the high nutritive value of cedar nuts, stands in the fact that cedar nuts contain almost all irreplaceable amino acids; half-unsaturated fat acids; A, B, C, D, E, P vitamins; and calcium, potassium, magnesium, phosphor and other mineral elements.
